Beta vulgaris
Perpetual Spinach, is neither a spinach nor is it perpetual. It is in fact a member of the Chard and Beet family. It is a hardy biennial, and will grow almost anywhere in the garden as long as it isn’t in too much shade. It can grow up to 50cm tall and wide. And regular harvesting is good for the plant and will encourage new fresh growth. The leaves of this little beauty tastes a bit like asparagus, and need to be used fresh as soon as they’re picked. They can be added to salads, or quickly tossed on a hot pan to cook!
